The nutritional info below is for the salmon itself. The garlic buttered veg will vary, depending on what you use, but will come in at approx 157 kcal, 5g carbs, 10g fat and 7-8g of fibre, meaning this low-carb, low-calorie meal provides half your daily recommended intake of fibre in one sitting!

- 1 skinless salmon fillet
- 1 small egg, beaten
- Spray oil
What you'll need
This diet-friendly recipe is possible with:
- Preheat your oven to 220C.
- Put the beaten egg in one bowl and the coating in another. Dip your salmon in the egg and then drop into the crumb. Shake until completely covered.
- Place on an oven tray, spray with a little oil and bake at 220C for approx. 15-20 mins or until the salmon is cooked through. We recommend serving with a nice pile of greens tossed in a spoon of garlic butter!
