Swap out the carby, fatty pastry for Lo-Dough - It's Apple Tart Like Never Before

What if we told you that you could have a slice of sweet, comforting apple pie for under 120 calories and 12.75g of carbs (nearly all of which are coming from the natural sugars in the apple)? You'd bite our hand off, right? Add to that the fact that each slice is just under 5g of healthy fibre and this apple tart is pretty much your dream diet dessert.

There is a common misconception that low-carb diets should consist of next to no carbs whatsoever. If following a strict ketogenic diet, then this may well be true, but if just reducing carbs, it is strongly recommended to continue eating 'green' carbs - ie the vast majority of fruit and veg (white potatoes should largely be avoided in this instance). So whilst this apple tart contains carbs - it's mostly in delicious, nutritious apple form! Carb's aside, this is also a low-fat recipe, so if just counting calories, it's a low-cal life-saver too.  

That's the health part over - so how does it taste? Well - judging by the time it lasted in the office, pretty damn fine! Soft, sweet apples encased in a cinnamon and vanilla custard, all held together in a Lo-Dough case - this dessert is yet ANOTHER winner. Take a bit of time over-laying the apples and it's super easy on the eye too.

Ingredients

Serves 4
  • 1 piece of Lo-Dough
  • 2 eating apples, thinly sliced into half moons
  • 2 large eggs
  • 60ml of single cream
  • 30g of sweetener (Sukrin: 1 recommended)
  • A teaspoon of vanilla paste
  • A good pinch of cinnamon

Method

  1. Preheat your oven to 140c/Gas Mark One.
  2. Roll out your Lo-Dough and push into a 7-inch tin.
  3. Arrange your sliced apples around the Lo-Dough - you made need to do two layers to use it all up. The more apple the better!
  4. Make a simple custard mix by whisking the cream and eggs together with the sweetener, vanilla and cinnamon.
  5. Pour in the custard mix over the apple and put into the oven to bake for 35-40 minutes. The custard should be set, but still have a bit a wobble.
  6. Allow to cool on a rack for at least 5 minutes. Cool further or alternatively, serve warm if desired.
