Ingredients

  • 1 piece of Lo-Dough, blitzed to a crumb
  • 70g of corned beef
  • 1 large egg, beaten
  • ½ an onion
  • 30g of quark
  • A quarter of a teaspoon of English mustard
  • A teaspoon of chopped fresh thyme
  • 6 sprays of fry-light
  • Salt & pepper

Method

  1. Oil a pan with 3 sprays of fry-light and soften the onion gently for a 10 minutes. Allow to cool.
  2. While the onions fry, add the blitzed Lo-Dough, egg, mustard, thyme and seasoning to a bowl and mix. Break up the corned beef into small chunks and stir through the mixture. Once cooled, add the onions too.
  3. Shape the mixture into a fritter and using the remaining sprays, gently fry the fritter on both sides until golden brown and cooked through (for approx. 3-4 minutes per side).
  4. Serve with a poached egg for breakfast or alongside salad for a light lunch. Brown sauce or ketchup (or both!) is a must.
